Autumn is a season of transformation, a time when nature gives us a feast of new flavors and inspiration. For us at Twentysix, it’s also a time to reimagine what we do in the kitchen, creating dishes that reflect the energy and vibrancy of this beautiful time of year. As Chef Francesco Pastore reflects, “Autumn has always been one of the most fascinating seasons. It’s always the bearer of new inspirations.” Our new fall/winter menu is no exception, combining seasonal produce with the passion and creativity that drive everything we do at Twentysix.
Chef Francesco’s philosophy has always been rooted in integrity and respect for food, two values that are more important than ever as the world continues to adapt to the post-Covid era. “Being the Chef at Twentysix is not just a job for me, but a constant message to the restaurant industry,” Francesco says. This mindset fuels our kitchen, where every dish is crafted with the utmost care and consistency, using fresh ingredients, zero waste, and a dedication to the craft of cooking. “We cook for more than a thousand people a day, with the same intensity, fresh ingredients every day, with extreme attention to detail,” Francesco explains.
With this spirit in mind, we are excited to share a few standout dishes from the new fall/winter menu, each one representing a unique blend of tradition, creativity, and seasonal flair.
Falafel: A Taste of Tel Aviv
After two years of perfecting the recipe, we are proud to introduce our signature falafel to the menu. This dish is a personal journey for Chef Francesco, who draws inspiration from a walk through the streets of Tel Aviv with a local guide. “Walking through the streets of Tel Aviv with a local person gave birth to the desire to recreate those fantastic lands, within a cloud of fresh herbs called falafel,” Francesco recalls. The result is an exceptional falafel served with a silky tahini sauce. It’s a dish that captures the spirit of the Middle East—fresh, vibrant, and bursting with flavor.
Seabass with Mediterranean Sauce: Simplicity at Its Finest
Sometimes, the simplest dishes leave the most lasting impression. Our seabass with Mediterranean sauce is a perfect example of that philosophy. Two fillets of tender seabass are served on a bed of Mediterranean sauce made with tomatoes, spices, celery, fresh herbs, lemon, and capers. The dish is designed to celebrate the purity of the ingredients, allowing the flavors to speak for themselves. As Francesco puts it, “The idea for this dish comes from the crazy desire to express simplicity.” Served with a side of rice, this dish is both comforting and refined, a true taste of the Mediterranean in every bite.
Malabi: A Sweet Journey to Persia
For dessert, we’re introducing Malabi, a traditional Persian dish that’s sure to transport you straight to the Middle East. Made from milk, corn starch, cream, rose water, and orange, this creamy treat is delicately flavored and beautifully textured. To add a modern twist, we serve it with frozen raspberries, pomegranate molasses, and chocolate crumble, offering a mix of cold and warm sensations. “Different textures, cold feeling, and a final taste that definitely brings you to Israel,” Francesco says of this dessert. It’s a perfect ending to a meal, light yet indulgent, and beautifully balanced.
